Celeriac And Orange Soup
1 celeriac
1 large orange
1 large onion
1 veg stock cube
Some orange juice
Some oil
Peel and chop the onion. Cook it in the oil. Meanwhile peel and chop up the celeriac. The tangled side is probably easier to just slice off. When the onion is softened, throw in the celeriac and turn it over, coating all the pieces, letting them start to cook.
When they're starting to warm through, zest the orange, add the orange zest and stock cube, then squeeze in the juice from the orange. Add a bit more orange juice, probably as much again (you could use two oranges if you wanted, more zest won't hurt). Then add water to cover the solid ingredients and bring to the boil. Allow to simmer until the celeriac is very soft.
Liquidize the soup in whatever manner seems best. It will be very thick so add some more water to bring it to a useful consistency, then bring back to the boil to serve.
We'd already eaten some when I took this last picture.
