Grandpa Richard’s Special Potatoes

2 large potatoes
Some veg oil
Salt
Pepper
Herbs
A clove of garlic


Wash and scrub the potatoes (leave the skin on as they have most of the flavour and goodness unless you are serving someone who won’t eat the skin). Slice the potatoes into slices about 1 cm thick, then put on some kitchen towel to extract moisture while the oven heats up.

Heat up the oven to 180C. Pour some oil into a baking tray and put to heat in the oven. Chop the herbs and crush the garlic. When the oil is hot, put the potatoes in the baking tray, turning them so they get covered in oil. Sprinkle with salt, pepper, herbs and garlic. Put in the oven.

After 15-20 minutes or so, turn the slices over. Another 15 minutes they should be browning and crisping on the outside and still soft in the middle and are ready to serve.
