More Beans
I'm back doing beans again! A slightly different version taking advantage of some leftover roast pork loin.
150g of lingot beans (50g per person)
An onion, peeled and chopped
A carrot, peeled and chopped
2 stalks of celery chopped
3 garlic cloves, cut up
1 small tin of tomatoes
Some leftover pork loin cut into cubes about the size of a bean
Some leftover pork gravy
A slug of vinegar
Some cooking oil
Soak the dried beans in water overnight. Heat up the oil in a medium sized casserole. Soften the onion, carrot, celery and garlic for ten minutes or more if needed. pour in some vinegar and let that reduce, then add the tomatoes and gravy. Season and bring to the boil then simmer for at least half an hour, perhaps more.
Drain the beans, then boil them in fresh unsalted water for ten minutes. Add the cubed pork to the sauce, then the beans. If it's a bit thick, not covering the beans, add a little water. Bring it back to the boil then turn down to simmer for another half hour.
