Baba Ganoush
1 good-sized aubergine
1 tablespoon of tahini
Juice of 1/2 lemon
A big glug of olive oil
somewhere between 1/4 and 1/2 a teaspoon of ground coriander
same amount of ground cumin
Grill the aubergine on high for quite a while, turning occasionally until it starts to collapse and the skin is hard. Leave it to cool. When it's cool scoop out the insides. Put the aubergine goo, and the other ingredients in a food processor. Give it a quick whizz - it doesn't have to be perfectly smooth. taste it to decide if it wants any seasoning or more spice.
To serve, you can drizzle a little more oil and sprinkle with parsley, or just get some vegetable batons or breadsticks and dip in.
