Corn Fritter
One left over cooked corn on the cob
A couple of tablespoons of self raising flour
Two spring onions
One (large) egg
A little milk
Fat (veg oil?) for frying
Cut the corn kernels off the cob. Chop the spring onions (so they are approximately the same size or smaller than the corn). Put the corn and spring onions in a bowl and sift over the flour.
Put a big heavy frying pan on to heat and warm the fat. Now beat the egg and stir into the flour, corn and spring onion mixture. If it is too thick add a little milk and stir.
Wait about one minute, then take small spoonfuls of mixture and put them into the pan, pressing the spoonfuls flat. Turn them over when brown on one side, and put them on some kitchen roll to drain. Then eat them with salsa or dip.
